When it's totally cold, my '83 635 auto won't crank on the key, but it will
crank and fire if I jump the pins on the diagnostic plug to operate the
starter. Switch off and then it will start on the key, but never first time. Is
this the ignition switch? Or am I in for all sorts of wiring-related
difficulties to track this down?

Sorry which pins operate the starter? There are two way to operate starter from diagnostic connector( one will destroy the ignition coil over time , the other is what Haynes manual says)...

Look , first of all : main relay( there's should be a little green wire, check if it's hot when "the instrument cluster is illuminated"-position 2 of ignition key-.If it's not hot -no electricity at all-, Your  On board computer has a faulty relay inside the brain....It's the relay that receive the input from his burglar alarm code on the OBC.This relay could be cleaned, but it's a  great fuss to reach with fingers or tools), or bad fuel  pump.

Other problems are sensors on clutch bellhousing....If they are dirty , they send info randomly.

Other last-but-not-least culprits: bad temperature sensor, bad ignition coil, bad ignition key contacts.....
