Should the centre air vent (the one above the radio, with the knurled knob in the centre which goes from hot to cold, and open/close knobs on each outer edge) light up? It's part no. 64.22.8.390.463 if that helps.

Mine doesn't, but I have found a bulb holder inside the large vent (the one with the alarm LED in it) which takes a small bulb and which is connected to the lighting circuit - it goes on and off with the lights and dims with the dash light dimmer. This bulb holder looks as if it should fit in the centre air vent knob, but I can't figure out where it would go. TIS is of no help.

Before I do any more dismantling, am I wasting my time, or should this knob actually light up?

I had a J reg 525iSE. Mine didn't light up. Don't know if I had a similar mystery bulb holder like you have as I didn't go looking inside the vents.

My car's a 535 e34 june '88 vintage.  The red/blue central strip is backlight and adjusted via the knurled dasboard rehostat dial to the left of the main display.  At full brightness the red & blue colour can be clearly seen; quite dark when at minimum.   I would assume your car has the air con controls with the infinitely variable fan speed.  The brightness is relatively eqivalent to that which is behind the two temperature dials for the pass/driver side temp control.
